Ingredients
* 1 whole chicken that weighs about 1.75kg
* 3 cloves garlic, halved
2 tablespoons soft butter *
* 7 grams of fresh thyme, finely chopped
* 1 lemon, quartered
Sauce
* 1 tablespoon red currant jelly
* 1 tablespoon cornstarch
* ½ teaspoon Worcestershire sauce
2. Place chicken in a medium-size roasting bag. Close the bag. Cut the top of the bag 6 times. Place chicken in bag and a small roasting pan. Boil for about 1 hour and 40 minutes. The chicken is cooked when the meat is cooked through and juices run clear when you pierce the chicken thighs with a sharp knife. Remove the chicken from the bag. Keep the juices in the bag. Allow chicken to stand up.
3. Cut the corners of the bag and pour the juice in a pan. Stir the redcurrant jelly. Mix cornstarch with cold water until a smooth paste. Gradually add to sauce. Bring slowly to boil, stirring constantly. Add Worcestershire sauce and season with salt and pepper. Simmer for 2-3 minutes, until sauce is thickened.
