How to do it:


Melt butter in soup pot, add celery, fresh thyme and scallion. Cook for 5 minutes or until leeks are soft. Add chestnuts and apples, reduce heat and cover the soup pot. Cook for 15 minutes, stirring several times. Add cream and broth, then some salt and black pepper.

Bring soup to a boil and then simmer it for half an hour. Pick off and discard the fresh thyme and puree the soup in batches in blender. Add additional salt and black pepper, if needed. Whip cream spicy ingredients.
